No I’m not, but 15 years ago I was.
I’ve worked at many restaurants, including management positions at large corporate chains. So yes, it stands to reason that I would have some knowledge of how they work.

No you have not. There have been laws for years now that state food products in commercials MUST be prepared as they are in the restaurant.
The difference today is that one person working a busy night at say McDonalds is generally dressing six big macs in under 90 seconds.
For commercial shoots they have one of their head corporate chefs (the ones responsible for creating menu items) make a single burger, and he gets as many attempts as he likes and as much time as he needs to make it pretty.
